Roast leg of lamb
- Divide beef into thirds, and cook each third with salt and pepper in olive oil until browned. Set aside. When done, add more olive oil, and brown onions in same pan. Add a little wine, simmer until almost evaporated, repeat a couple of times, than return beef to pot, and cover with wine. Simmer for days.
Roast Orchard Duck, stuffed with apples and cloves, served with homemade honey apple sauce and stuffing cakes.
- Duck
- Wash and dry duck. Prick skin all over with sharp fork and rub on salt. Stuff cavity with sliced apple and a handful of full cloves. Roast on rack in 350 degree oven for 35 minutes a pound.
- Stuffing
- Melt butter in a pan, add finely chopped medium onion, cook until translucent. remove from heat, add a grated apple, breadcrumbs, and an egg, beat into a thick batter. Form into cakes or balls, and place on cookie sheet. Bake in oven for at least 30 minutes.
- Apple Sauce
- Thinly slice four apples, cover slightly in water, add one cinnamon stick, and cook at high heat for at least 10 minutes, until water mostly disappears. Turn off heat and mash apples with butter, and honey until the desired consistency is reached.
